Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series is for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned Pork Curry Casserole recipe.
Pork Curry Casserole
Ingredients
- 12 oz. Ground Pork
- 1/3 cup Mayonnaise
- 1/3 cup Sour Cream
- 1 tsp. Curry Powder
- Salt
- Pepper
- ½ cup Heavy Cream
- 1 Tbsp. Curry Powder
- 1 Tbsp. Cumin
- 2 oz. Shredded Mozzarella Cheese
- 2 cups Cauliflower
Directions
- Fry the ground pork with salt and pepper to taste as well as 1 tsp. of curry powder.
- Mix together in a bowl the mayonnaise, sour cream, heavy cream, cumin and 1 Tbsp. of curry powder.
- Steam the cauliflower for 5 minutes.
- Combine the cooked ground pork, steamed cauliflower and the sauce in a casserole dish.
- Top with the shredded cheese.
- Cook in a pre-heated oven of 375 F for 20 minutes.
