Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned recipe for Keto Chicken Taquitos.
Keto Chicken Taquitos
8 cheese slices (real cheese) | 10 oz. cooked chicken |
1 Tbsp. salsa | 1 Tbsp. sour cream (full fat) |
- Preheat oven to 350 F. Coat baking sheet with parchment paper.
- Place cheese slices evenly on the parchment paper.
- Bake 5-7 minutes, until outside edges are browned and crisp.
- Remove from oven and cool 1-2 minutes.
- Place chicken and salsa at one end of the cheese slice and tightly roll into a taquito.
- Serve with sour cream.
Makes 8 taquitos
