Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series will be for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned recipe for Keto Chicken Taquitos.

Keto Chicken Taquitos

8 cheese slices (real cheese)10 oz. cooked chicken
1 Tbsp. salsa1 Tbsp. sour cream (full fat)
  1. Preheat oven to 350 F.  Coat baking sheet with parchment paper.
  2. Place cheese slices evenly on the parchment paper.
  3. Bake 5-7 minutes, until outside edges are browned and crisp.
  4. Remove from oven and cool 1-2 minutes.
  5. Place chicken and salsa at one end of the cheese slice and tightly roll into a taquito.
  6. Serve with sour cream.

Makes 8 taquitos

Per Serving (2 taquitos) = 57% fat, 0 carbs, 43% protein
