Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series is for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned Keto Cheese and Cauliflower Puff recipe.

Keto Cheese

Keto Cheese and Cauliflower Puffs

Ingredients

1 cup Cheddar Cheese (shredded)½ cup Riced Cauliflower
5 Egg Whites

Directions

  1. Preheat oven to 400 F
  2. Mix ingredients together.  Let sit for 5 minutes.
  3. Grease muffin tins.
  4. Put approximately 1 inches of the mixture in the bottom of each muffin tin.
  5. Bake at 400 F for 15 minutes.  Edges should be golden brown.
  6. Let sit for 5 minutes and pop out of the tin.

Makes 12 puffs
Per Puff = 62% fat, 3% carbs, 35% protein
