Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series is for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned Keto Energy Bite recipe.
KETO ENERGY BITES
Ingredients:
¼ cup hemp seeds | ¼ cup almond slivers |
¼ cup pumpkin seeds | ¼ cup sunflower seeds |
¼ cup peanut butter | 1 Tbsp. butter |
1 tsp vanilla | Dash pink Himalayan salt |
½ tsp sweetener | 1 Tbsp. almond flour |
2 pieces unsweetened chocolate |
Directions:
- Mix together nuts and seeds with all other ingredients except chocolate.
- Taste and adjust for sweetness.
- Stir in small shavings of chocolate.
- Use tablespoon to form small balls. Place on cookie sheet lined with parchment paper.
- Chill for 30 minutes until firm. Keep refrigerated or frozen.
