Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series is for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned zucchini boats recipe.
Zucchini Boats
Ingredients
- 12 oz Ground Beef
- ½ cup Green Pepper
- 4 medium Zucchini
- ½ cup Rao’s Marinara Sauce
- 4 oz Mozzarella (shredded)
- 2 Tbsp. Parmesan Cheese
- Salt, Pepper, Garlic, and Seasoning Salt to taste
Directions
- Preheat the oven to 350 F.
- Cook the ground beef. Add the salt, pepper, garlic, and seasoning salt to taste.
- When the beef is almost cooked, add the green pepper. Cook until it is done.
- Add the Rao’s marinara sauce and simmer.
- Slice the zucchini in half, length wise. Hollow out the 4 zucchini, getting rid of the seeds.
- Put the zucchini on a baking sheet, lined with parchment paper.
- Spoon in the meat and sauce mixture into the zucchini.
- Add the cheeses on the top of the zucchini.
- Cook for approximately 15 minutes, until the cheese is melted.
