According to National Today, December 13th is National Cream Cheese Frosting day!  It was created to recognize the importance of dairy in our lives.  Well, if you’re keto, chances are you are a big fan of all things dairy, but especially cream cheese!

A History of Cream Cheese Frosting

Cream cheese was created in the 1870’s in New York City.  Cheesemaker William Lawrence made the best mistake ever when he tried to make a fancy French cheese, and it turned out with a softer texture.  Cream cheese was born!  

Back in those days, cream cheese was a luxury only enjoyed by the richer people in society.  Luckily, it has become more common and it is used now for many different things.  It’s known for being spreadable, and that makes it perfect for making things like a topping on bagels (keto bagels, of course) and frosting.

Uses for Cream Cheese

Before I was keto, plain cream cheese over a toasted bagel was one of my favourite breakfasts I would get at Tim Hortons.  Well, when I started being aware of carbs, I looked it up and this breakfast option has about 62 grams of carbs.  That’s over 3 day’s worth for me.  No more of that.

What I did find, however, was many new ways to enjoy cream cheese!  My favourite has to be cheesecake.  There are places in my area who specialize in keto cheesecakes, and this is my go-to for all special occasions!  It’s pricey, but oh so worth it.  They are creamy and delicious!  Ummm, now I’m thinking about cheesecake for over Christmas.  I may need to make a phone call…

Cream cheese is also in a lot of the things we eat on a regular basis.  It’s used in our flat bread recipe, as well as chaffles.  If you don’t know about chaffles, you need to look them up.  I don’t care if you’re keto or not – they are made with eggs, cream cheese, and almond flour and they are delicious.  We have them for breakfast every weekend!  And, of course, it’s a main ingredient in cream cheese frosting.

Uses for Cream Cheese Frosting

We use cream cheese frosting for many different baked goods.  I used to love making sugar cookies and frosting them.  Now that we’re keto, I make “Just Like Sugar Cookies” and frost them with cream cheese frosting.  It is a staple to use on our keto cinnamon buns.  And, naturally, any time we make cupcakes or a cake, we frost it with this recipe.  So, without further ado, here is the recipe we use for cream cheese frosting.

Recipe for Cream Cheese Frosting

  • 4 oz. Cream Cheese (softened)
  • 2 Tbsp. Butter (softened)
  • ½ cup Sweetener
  • 1 tsp. Vanilla
  • 1 Tbsp. Whipping Cream
  1. Cut the cream cheese and butter into cubes and put in the microwave for 20 seconds at a time, stirring in between, until softened.
  2. Mix together all ingredients with an electric mixer.
  3. Use immediately or store in a covered container in the fridge.

Makes 1 cup of frosting (84% fat, 8% carbs, 8% protein). 

Here’s an extra tip…if you want chocolate cream cheese frosting, just add ¼ cup of unsweetened cocoa and another ½ cup of sweetener.
