Hard Days & Nights of Keto Prep

I’m not going to lie; I’m writing this the day before it’s due.  The last week has been difficult for our family.  Bill is working 14+ hour days and has been away for a couple of weekends.  That means my main cook is out of the building so I’ve been doing the majority of the cooking and the food prep and the cleanup.  Like everyone else, my life is full of work.  I have a full-time job, a contract job, and this blog. Make for some tough days of keto prep.

My Busy Days of Keto Prep

My days have looked something like this.  I get home from work and food prep.  On Monday, we needed more bacon cooked for breakfasts for the week.  Tuesday, we needed something to go with that bacon for breakfasts, so I made French toast bites.  I made a double batch and froze some of them by just putting them in a freezer bag, getting the air out, and sealing them up.  Wednesday, we had a supper that didn’t have leftovers so I had to pack pepperoni, cheese, vegetables, and dip to take for lunch the next day. 

Thursday, I needed more vegetables prepped for lunches, so I cut them up, portioned them out, and put them in resealable sandwich bags.  Friday, we didn’t have anything sweet for our after-dinner treat, so I made turtle cookies.  I did all this between 4pm and 6 pm.  Then, when Bill texted that he was on his way, I made supper.  He got home between 6:30 and 7:30 pm.  By the time we had supper and we cleaned up, it was bedtime.  I had no time or energy this week to do what I love to do – write.  

Is the Keto Prep Worth It?

Is it all worth it?  Some days, when I’m so tired of prepping food every day, I wonder.  But then I think back to before keto.  I’d be exhausted just from work.  I wouldn’t have any energy to do anything but fall in front of the TV and watch something mindlessly until Bill got home.  Often, we’d order food (pizza or hamburgers from a fast-food place) and drink a Pepsi and watch TV together.  Then we’d be on our phones until it was time for bed.  I wasn’t more productive – I was much, much less productive.  Keto has given me the energy to be able to do all this.

Thinking of all that, I shook my head at my self-pity, put on some upbeat music, and rocked out while I prepped.  Then, I sat down at my computer and I put together this blog.  And now, I feel very productive and re-energized!

Sometimes Keto Isn’t Easy

Yes, living a keto lifestyle is a lot of work.  It’s especially a lot of work when you’re spoiled by having your own personal cook and suddenly, he isn’t available so you’re doing a lot of it alone.  But this weekend, I plan on taking some time for me.  I’m going to sit in front of a wood fire, write my blogs, work on our next book, spend some time with my husband (hopefully), and re-group.  

It can be easy to get overwhelmed by the prep work keto entails.  Sometimes, it can seem easier to take a shortcut and buy the pre-packaged foods or order takeout, or even just give up.  It’s not.  Think back to what you felt like before.  That’s not easy, that’s a very hard, sad way to live.  So do the prep.  It is worth the effort.
