It’s #EggDay.  Eggs are often an important part of a keto lifestyle.  I have a real love/hate relationship with eggs.  Sometimes they are good but sometimes I just can’t stomach them at all.  It all depends on my mood.  But some people actually do egg fasts, where the only thing they eat is eggs.  I don’t think I would like that or feel it’s the best way to use eggs on keto.

According to National Today, eggs have been eaten by humans since the Neolithic Age.  This dates back to between 10,000 – 4,500 B.C.  It was when we humans began to settle in one area and use agriculture as a way to survive.  The Egyptians and Chinese people are recorded as keeping fowl to lay eggs for them to eat as early as 1400 B.C.  In 300 B.C. chicken farmers were incubating eggs in warm, clay ovens.

Two Eggs are Better Then None

Two chicken eggs are great for those on keto.  They have 160 calories, 11 grams of fat, only about 1 gram of carbs, and 13 grams of protein.  But you don’t have to stay with just chicken eggs.  Pheasant, quail, goose, gull and turkey eggs are also eaten around the world.  If you’re having a party and want to make a huge omelet, you may want to consider an emu egg.  One emu egg is equal to about 12 chicken eggs!  Have more friends?  An ostrich egg is comparable to about 24 chicken eggs!

So, without further ado, here are my top 10 ways to prepare your eggs of choice.

10. Scrambled eggs – made with a little heavy cream added and your choice of seasonings.

9. Toppings for casseroles – a few of our casseroles (like the Philly Cheesesteak casserole) has an egg mixture that cooks on the top and adds some nice texture and flavour.

8. Fried eggs – put this with some bacon and it’s good for breakfast, lunch, or dinner!  Personally, I like mine fried over hard.  I’m not keen on the yellow yolk oozing out.  

7. No crust quiche – all the flavour and goodness of quiche without the carb-y crust.

6. Egg muffins – These are nice little to-go breakfasts.  You bake the egg with bits of ham or bacon in muffin tins.  They come out solid and are great to eat and run.

5. Hard boiled eggs – We do a few of these in advance and take them for a good keto snack.  I like mine with just a little salt and pepper on top.

4. Eggs Benedict – This is usually served on an English muffin, but you can easily skip that and keep the taste.  We have a recipe for keto hollandaise sauce that is so rich with so much flavour!  It’s not a quick breakfast, but it’s awesome for a weekend.

The Top 3 Ways to Eat Eggs on Keto

3. Omelets – I really enjoy a taco omelet, made with ground beef and flavoured with taco seasoning.  I top it with sour cream, guacamole and a little salsa.  And, of course, cheese.  What’s an omelet without cheese?

2. In keto baked goods – pretty much all our dessert options contain eggs.  This is not a treat.  This is a necessity!

1.Deviled eggs – We did a blog about deviled eggs and they deserve top billing again.  How could an egg be more keto?  Mix it with mayonnaise!  So tasty and such a great snack.

Eggs have gotten a bad rep over the years.  Nutritionists have told us they were good for us.  Then they raised our cholesterol.  Then you should just eat the egg whites.  Now, the yolks are seen as having essential nutrients too.  Honestly, if you like eggs, just eat them.  They fit in really well to the keto diet and give you lots of options for breakfasts, brunches, snacks and dinner.
