It’s summer and that can be a more challenging season for people on keto. We cook a lot, make our own fat bomb desserts and meals so we stay on track. And that can be difficult when it’s hot. I came across a search on Pinterest for no-cook meals. That got me thinking of keto food we can make without working over a hot stove. We have a few options in our recipe book, and I thought this would be a good series to do to share our ideas. Part three of our series is no-cook keto breakfasts.

Absolutely No-Cook Keto Breakfasts

There are recipes online for chia puddings. They sound great, but I can’t get over the texture. Still, with a net carb intake of 2 grams, they’re a great option if you like them. You can add some almond milk, cream, and/or berries to give some more flavour. Good luck and God bless with this one. I’m afraid you’re on your own.

My favourite no-cook breakfast is energy bites. When I started keto, I tried some granola recipes and found they taste, well, like sawdust. Then, I found a recipe for energy bites, and they have been a go-to for us ever since. You crush up a variety of nuts that are then held together with peanut butter (just nuts, of course – no sugar), butter, and a little sweetener. We put some Lily’s chocolate chips in ours to boost the flavour. They are delicious. If you want the recipe, go to our website and search energy bites. You’re welcome!

Just like you can put together keto items for meals, you can also do this for breakfast. Grab a container with different compartments and raid your pantry for things you like. You could do some nuts, berries, cheese, and even pre-cooked bacon. Yummy Inspirations had this idea, and I hadn’t considered doing it for breakfast. It sounds like a great little variety pack for on the go.

Smoothies as No-Cook Keto Breakfasts

The other no-cook keto breakfast option is smoothies. You have to be a bit careful, because traditionally smoothies are carb heaven. I blend in a combination of almond milk, cream, cream cheese, and berries. Depending on how sweet the berries are, I can add a teaspoon or so of sweetener. If you want, you can add some low carb protein powder as well. Honestly, I’m not a big fan of smoothies anymore. I’d rather have something substantial or just fast until lunch.

Microwave and Toaster Options

Is the microwave cooking? I don’t think it is. It doesn’t heat up the kitchen, and it usually takes about 30 seconds. You can easily scramble eggs in your microwave. Put two eggs in a microwave-safe dish. Add a couple of tablespoons of cream, and season with salt and pepper. Mix it all together with a fork. Put in for a minute and stir it up. If there’s still some liquid, keep heating.

You can use some pre-cooked bacon with the eggs you made and put it all in a Mr. Tortilla with some mayonnaise and/or guacamole and you have yourself a grab and go breakfast sandwich.

You can also use Carbonaut bread for your sandwich. Or, if you miss just grabbing some toast on your way out the door, toast the Carbonaut bread and put some butter and peanut butter on it. I’ll be honest, we got rid of our toaster when we turned to keto, so I’m not sure how this would actually taste, but it sounds good!

The Once Cook Keto Breakfasts

Okay, this may be cheating a little, but usually we do a meal prep on Sunday and make something we can have for breakfasts all week. I really enjoy the cheesy biscuits, blueberry muffins, and French toast muffins – all recipes that you can find on our website. Each recipe makes about 12 items, so it lasts us for our week of work. We throw it in the microwave with some pre-cooked bacon from Costco, and you have a great breakfast in 30 seconds. Paired with coffee, of course!

A Final Thought

I used to stop at our local coffee shops for coffee and a bagel every morning. Do you know how much money that is? But, I didn’t want to cook in the morning. I am not a morning person at all, so getting up early and making bacon and eggs is not happening. So, I use these options for every season. Sure, it’s hot in the summer and we don’t want to cook, but honestly, I don’t want to cook any time of year.
