Saturday or “Caturday” as we call it in our house is a good chance to decompress, spend some time with the kitties, do a little prep and get ready for the week ahead with a new keto recipe. We tend to do a meal we are familiar with that is quick and easy so we have more time to do the fun stuff. If you do the same the “Caturday Recipe” series will be for you. No videos, no pop ups, no explanation of the mountain we hiked to pick the lettuce… just a plain ole’ fashioned recipe for Keto Chicken Cordon Bleu.
Keto Chicken Cordon Bleu
12 oz. Chicken | 3 oz. Ham |
2 oz. Butter | 3 oz. Cream Cheese |
½ Tbsp. Dijon Mustard | ½ oz. Lemon Juice |
¼ tsp. Salt | 2.5 oz. Cheese (shredded) |
- Cook the chicken until done and shred it.
- Cook the ham. We use a ham slice. Breakfast ham makes it a bit saltier.
- Soften the cream cheese in the microwave for 20 seconds at a time, stirring in between.
- Melt the butter in the microwave.
- Preheat the oven to 350 F.
- Blend together with a mixer the butter, cream cheese, mustard, lemon juice and salt.
- In a greased casserole dish, mix together the chicken, ham and blended sauce.
- Put the shredded cheese on top of the casserole.
- Bake for 20 minutes.
