Since starting keto three years ago, Bill and I have used cream cheese keto frosting. It seemed more on plan for us. But, back before keto, we loved buttercream frosting. It was sweet and smooth – in fact it was so sweet, it sometimes made you feel a bit sick, but in a good way. There were times of stress that we would go buy a cake just because, and eat it in about 3 sittings. Ahh, the “good” old days when we were uncomfortably big and felt so unhealthy. So, I was a bit excited when I found a keto frosting recipe for buttercream.
Finding Keto Frosting Recipes
I find most of our keto recipes on Pinterest. I find it a really reliable source for them. You don’t have to go from website to website, searching for something good. And, they have pictures with them which makes it easy to pick the ones you might want. For instance, when I see a dessert with shredded coconut sticking out of it, I know that one is not for me. Poor Bill doesn’t get a say, but he can always bake his own…
I found a recipe for keto brownies, so I tried them out. They were pretty good, but everyone knows the best part of a brownie is the frosting. Traditionally, I would have used buttercream frosting on a brownie, so I found a recipe for it online.
The Recipe
So, I’m not going to make you scroll through my entire article for the recipe because I find that so annoying! Here it is:
Ingredients
- 1 cup butter (room temperature)
- 1 ½ cups Swerve confectioner sweetener
- 2 Tbsp. heavy cream
- 1 tsp. Vanilla extract
- ½ cup sugar free chocolate chips
- 2 tsp. Cocoa powder
Directions
- Mix the room temperature butter and sweetener with an electric mixer on low until incorporated together.
- Add the cream and vanilla.
- Place the chocolate chips in a microwave and melt in 30 second intervals, stirring in between. I added just a tiny bit of butter to them to help them melt smoothly.
- Pour the chocolate chips and cocoa powder into the mixer.
- Mix on medium-high for 6-8 minutes until the frosting is light and fluffy.
And there you have it. Chocolate buttercream keto frosting.
The Results of the Buttercream Keto Frosting
The frosting, through no fault of its own, was just not my cup of tea. The thing you don’t really think about when finding recipes is how your tastes change when you start keto. I now enjoy things with lots of different flavours. I like more spice, more acid, even bitterness. Before keto, all I wanted was sweet flavours. So, it was a lot like traditional buttercream frosting, but I found it just too sweet.
Also, with all that sweetener, there was that cool sensation after eating it that I find disturbing. Swerve is a good sweetener that doesn’t have a lot of aftertaste, so that wasn’t an issue. But, you could tell you were taking in a lot of sugar alcohols. It just didn’t taste good to me.
A Final Thought
I think we will stick to the cream cheese frosting option. Click on the link to go right to our chocolate frosting recipe on our website. It’s still sweet, but it’s also a little tangy. There isn’t quite as much sweetener in it, and the cream cheese tang takes away some of that sweetness. I still can’t eat a lot of it anymore, but I can certainly eat some on top of a cake or brownie – especially for a special occasion.
