It’s summer and that can be a more challenging season for people on keto. We cook a lot, make our own fat bomb desserts and meals so we stay on track. And that can be difficult when it’s hot. I came across a search on Pinterest for no-cook meals. That got me thinking of keto food we can make without working over a hot stove. We have a few options in our recipe book, and I thought this would be a good series to do to share our ideas. Part two of our series is keto desserts and snacks that are no-cook.

Keto Desserts that are No-Cook

First and foremost for me would be a no-bake cheesecake. Cheesecake is my absolutely favourite, and I get one every year now for my birthday (keto-friendly, of course, compliments of Antoinette’s). But, I also found a recipe for a smaller version that is also keto-friendly and not quite as expensive to make. It’s good on its own, or you can pair it with a few berries and whipped cream.

What the heck is a macaroon? Some people say it’s a delicate shell with cream in the middle, but here in Nova Scotia it’s a cookie made of chocolate and coconut. I think some call them haystacks. Whatever you want to call them, they are no-bake and if you’re like Bill who likes coconut, they are a great option for dessert.

No-cook keto dessert option: Almond Cheesecake Fat Bombs

You don’t need a machine to make a version of chocolate soft ice cream, and there is no stove required. You just need some cream, sweetener, cocoa, and a little freezing time. But, I really like the chocolate mousse recipe I found. Add a little whipped cream on top and you feel like you’re indulging, but you’re still on plan.

Keto Desserts That Use a Microwave

Maybe this is cheating a bit, but I don’t consider using a microwave the same thing as cooking. It’s putting something in and pressing a few buttons. We sometimes make blueberry blossoms, which we covered in chocolate. This requires a microwave to melt it. We make the blueberry part out of a cheesecake mixture and form them into balls and freeze them. Once frozen, we melt some chocolate chips with a little butter to coat over the balls. They get stored in the fridge and they are delicious!

The other microwave keto dessert we have is the cinnamon mug cake. It tastes like a cinnamon roll, but takes a small fraction of the time and work. You dump in all the ingredients and stick it in the microwave. Boom! Ready to eat!

The Extras

So, desserts often need a little something to send them over the top. A lot of these extras are things you just whip up with an immersion blender or a mixer. No stove or oven required! We often make either a cream cheese frosting or whipped cream (made with real whipping cream, of course) to set off the desserts we mentioned above. We also have a recipe for ice cream that sets off no-bake desserts really well.

Fat Bombs for Keto Desserts

A fat bomb is really just a little ball of deliciousness that brings you more fat for your keto meals. We often have them in the fridge and use them as a dessert after dinner. There are a lot of these recipes on our website – such as the cheesecake fat bomb, the cookie dough fat bomb, and the almond cheesecake fat bomb. Have you ever had a diet that encourages you to eat things like this before? Because I haven’t, and I love it!

Other Snacks

If you’re not feeling the sweet but would rather have some savory options that don’t require cooking, here’s a couple of quick options. We enjoy peanut butter that is just 100% roasted peanuts. You can put a spoonful of it on sticks of celery and it will take you back to your childhood! Pepperoni and cheese is a staple in our house, although I prefer this snack at lunch time, rather than dinner. There’s something about dinner time that just makes me want a dessert after the main meal.

A Final Look at the No-Cook Keto Desserts and Snacks

Let’s face it, we have better things to do in the summer than cook over a hot stove. I hope this gave you some ideas on what to prepare for dinner and dessert tonight!
