It’s my favourite time of the year; summer! I love the warm weather, the outdoor activities, and the longer days. Then there is the food. Summer food is the best, and its my favourite way to enjoy the beginning of summer. June 21st is the day we will be enjoying summer solstice keto celebrations.

A History of Summer Solstice

This year, summer solstice lands on June 21st. This is the day when the sun reaches the highest position in the sky and we experience the longest period of daylight. According to National Today, celebrating the start of warmer and longer days is not new. It has been celebrated by cultures throughout history. It often incorporates themes of religion and fertility. Most cultures celebrate this date as a renewal of energy and growth.

Move from Winter to Summer Solstice Keto Celebrations

The one common denominator to celebrations tends to be that they are outdoors. Living in Canada, we are very excited about summer each and every year. It’s a time we get to shed our winter coats and boots, and leave our homes without layers and layers of clothing. We no longer have to start our cars early to let them warm up and scrape the ice and snow off them. We can actually enjoy being outdoors.

Now, some people enjoy winter. I think those people are wrong, but some do. Personally, I hate everything about winter, and love just about everything about summer. The activities I enjoy are things like kayaking, swimming, and just being outside in the sun. I will take mowing the lawn over shoveling snow from the driveway any day. I am a little like our cats – I love to bask in the sun.

Ideas for Summer Solstice Keto Celebrations

What do we as human beings do to celebrate? We eat! Many people enjoy celebrating summer solstice with a picnic or BBQ. It’s the beginning of food growing season for those of us in the Northern hemisphere, so we often enjoy fresh fare from our gardens. Foods like strawberries, rhubarb, and beet greens are starting to ripen.

What could be a better way to celebrate the start of summer than a BBQ. You can keep it simple with hamburgers, or fancy it up with ribs. We enjoy the G. Hughes Sugar Free BBQ sauce. It tastes amazing and we find it doesn’t have the bitter aftertaste that many sugar-free products have.

We enjoy a salad with our BBQ meat. A broccoli salad or plain, old Caesar salad will hit the spot. It adds a few carbs to our meal, but it also adds necessary vitamins and minerals. Oh, and it tastes good! If you have a BBQ without a salad, is it even a proper BBQ?

Finally, we can complete our meal with a fresh strawberry shortcake – one of my favourite desserts! We just shared a recipe for a keto-friendly version of strawberry shortcake. It has a Belgium chaffle as a base, along with the fresh strawberries and some delicious whipped cream. My mouth is watering already!

I cannot wait to celebrate summer solstice as the longest day of the year. I’ll need more daylight hours just to get all my eating done! I may take in a few extra calories on that day, but it will still be keto and it will definitely be delicious.
