I am not a morning person, so I need a quick keto breakfast I never wanted to eat a large breakfast and the thought of getting up earlier to make breakfast was not appealing to me.  I would have a cup of tea and toast.  Often, I’d sleep an extra 10 minutes and take the toast on the road with me.  So, when I started keto, I was worried about what I would eat for breakfast. 

Everything I read talked about having bacon and eggs every morning.  My stomach does not wake up until about 10 am.  I knew having a big breakfast and getting up early to make it was not sustainable.

I did lots of research and tried lots of different options before I found some things that worked for me.  Now, full disclosure, I usually do intermittent fasting during the week because I find it works better for me.  But on the days that I do want breakfast, I have these items on hand so all I have to do is stick them in the microwave for 30 seconds and I am good to go!

10. Hard boiled eggs – These are great for breakfast or for a keto snack.  You can heat them up in the microwave or eat them cold.  We do a few up and keep them in the fridge.

9.  Cinnamon buns – Before keto, cinnamon buns were a sinful pleasure.  Now, I can do them up on the weekend and have one guilt-free for breakfast.  Keto cinnamon buns are high in fat and low in carbs.

8. Cheesy cauliflower puffs – These are made with riced cauliflower and have a light, fluffy texture to them.  I didn’t think I’d like them as a breakfast food, but they are actually really good!

7. Egg and sausage bites – These are little muffins made with egg and cheese with slices of sausage mixed in.  You bake the ingredients all together in muffin tins.  You can eat them with your fingers and they taste so good.  

6.  Pancakes – We make these keto-friendly goodies ahead of time and keep them in the fridge.  Stick them in the microwave for 45 seconds, pile on some butter and sugar-free syrup and you are ready for a delicious breakfast!

5. French toast bites – these are kind of like the egg and sausage bites.  You blend together the ingredients and bake them in muffin tins.  They taste like french toast but they are easy to eat by hand.  Or, you can add some sugar-free syrup and have them on a plate.

4. Skillets – I find these a bit too filling for breakfast, but Bill really likes them.  We use a base of eggs and add some leftover meat to it with cheese and sometimes a little green pepper.  We can make some ahead of time and put a serving in a container to heat up in the morning.  It’s like having a morning omelet without all the work.

3. Energy bites – these are nuts mixed with all natural peanut butter.  These are some of our favourite little balls of goodness.  They are high in fat and in protein while being low in carbs.  If you need a little extra pep in your step, these are a great option.  They are just mixed together and kept in the fridge.

2. Cheesy biscuits – These are my favourite breakfasts because they remind me of actual biscuits.  Made with almond flour and cream cheese, they only have 2 grams of carbs in each one and they taste so good.  I cut them in two and microwave them for about 20 seconds and then lather them in butter.

1. Bacon or sausage – We always have bacon and/or low-carb sausage done up ahead of time and waiting for us in our fridge.  We will add it to energy bites, French toast bites or cheesy biscuits to up the fat without adding carbs.  If you don’t have cooked bacon in your fridge, are you even keto?
