When you start keto, you come to terms with the fact that beautiful, fluffy bread is in your past.  You find alternatives to bread that you like.  We’ve done blogs and shared recipes on flatbread, Mr. Tortilla wraps, and tried many variations of keto bread.  But, I am happy to report that we have found a winner: Carbonaut bread!

A Little About the Carbonaut Company

The Carbonaut Company is in British Columbia, Canada.  It’s a family-owned company that launched 13 low carb keto bread products in 2021.  They are a bunch of bakers who pride themselves on making products that have the taste and texture of bread, while offering low carb options.  Their products are keto certified by the Paleo Foundation.  

Reviewing Carbonaut Keto Bread Products

Back in July, I wrote a blog about their hamburger and hotdog buns.  In that blog, I shared that I tried their bread, and I was not impressed.  I found the texture really gummy and unpleasant.  Carbonaut replied to my critique by suggesting that I had tried the gluten-free bread, and I should try their regular bread options.  So, I did.

Well, let me tell you, it was a game changing bite!  Their bread contains some starch, but it isn’t the kind that raises your blood sugars and contains lots of carbs.  They use “resistant” starches, which means that your body treats it the same as if it is fiber.  It just passes through.  They use a little starch to feed the yeast so the bread rises and becomes fluffy.

Keto Bread Ingredients

You’ll notice quickly when you go to purchase a keto bread, such as Carbonaut, that it is a lot more expensive than your regular grocery store options.  Dempster’s, for example, costs about $3.99 for a loaf.  Carbonaut bread, if not on sale, costs about $10.99 a loaf.  That’s a big difference!  Is is worth it?  You be the judge.

Let’s look at the first 5 ingredients of Dempster’s white bread.  First is wheat flour, second is water, third is sugar (!), fourth is yeast, and fifth is vegetable oil.   Now, let’s look at Carbonaut bread.  First listed is water, then wheat protein, third is resistant starch, fourth is flax meal, and fifth is sunflower oil.  Carbonaut brags that they use no artificial ingredients, fillers, or preservatives.  Their ingredients are not genetically modified.  And, they don’t use sugar.  

Do the Numbers Add Up?

So, if we continue with Dempster’s as a comparison, two slices of their white bread is 170 calories.  They have 2 grams of fat, 33 grams of net carbs, and 6 grams of protein.  Then, if we look at Carbonaut white bread, two slices gives you 150 calories, 7 grams of fat, 2 grams of net carbs, and 13 grams of protein.  To someone on keto, that’s a dream come true!

Using Keto Bread

You need to use Carbonaut bread fairly quickly, because it does not have preservatives in it.  It has a shelf life of about 10 days.  Many retailers sell it frozen so it stays fresh for you when you take it home.  It will also last a little longer if you put it in the fridge.  But, when it’s on sale, we will often buy a couple of loaves and keep it frozen until we’re ready to use it.  

Just as Carbonaut buns made our BBQ a beautiful thing this past summer, the bread makes breakfast special.  I never realized how much I missed toast and peanut butter!  And, I forgot how convenient it is to have bread at your fingertips.  We use it for tuna melts, for garlic bread with zucchini noodle pasta, and a quick lunchtime sandwich.  

A Final Thought About Keto Bread and the Carbonaut Company

It’s important to note that we are not paid to review this product.  We are just fans of the company and all their products we have tried so far.  Sure, it’s more expensive, but for us the quality is worth it.  If you have the opportunity, grab a loaf and try it for yourself!
